Greek Potatoes – lemony, buttery roasted Greek style potatoes. A perfect side dish for any meal.

2 lbs fingerling potatoes, halved
2 Tbsp olive oil
2 Tbsp butter
Juice of 1 lemon
4 cloves garlic, minced
