A soft blondie reminiscent of carrot cake that is topped with cream cheese and chopped walnuts.

- 1 cup butter, melted
- 2 cups brown sugar
- 1 cup granulated sugar
- 1 tablespoon vanilla extract
- 2 teaspoons cinnamon
- 4 whole eggs
- 2 ½ cups all-purpose flour
- ½ teaspoon salt
- 2 med/large carrots, grated finely, about ¾-1 cup
- ½ cup walnuts
