Who knew combining a vegetable and a cake would turn out so amazing?! You must try these extra-moist mini carrot cake cupcakes! They're just the right size to satisfy any sweet tooth!

For Cupcakes:

1 Cup flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 tsp nutmeg
2 eggs
1/2 Cup sugar
1/2 Cup brown sugar, packed
1/2 Cup+ 2 Tbsp vegetable oil
1 tsp vanilla
1 1/2 Cups grated carrots
1/2 Cup crushed pecans

For Icing:

2 Cups powdered sugar
1/4 Cup butter, softened
4 oz cream cheese, softened
1 tsp vanilla
