Carrot Cake Whoopie Pies are like Little Debbie oatmeal creme pies, but with moist carrot cookies and whipped cream cheese frosting.

Carrot Cake Cookies:
1 cup (2 sticks) unsalted butter ( room temperature )
3/4 cup packed light brown sugar
3/4 cup granulated sugar
2 large eggs ( room temperature )
1 tsp pure vanilla extract
2 cups all-purpose flour ( plus more for flattening cookies )
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
2 cups old-fashioned rolled oats
1 1/2 cups peeled ( shredded carrots about 3 carrots )
1 cup golden raisins
Cream Cheese Frosting (the BEST!):
8 oz cream cheese ( room temperature )
1/2 cup unsalted butter ( room temperature )
1 cup powdered sugar
1 tsp pure vanilla extract
