This carrot cake recipe is a family favorite! It has cinnamon, nutmeg, pecans, vanilla and, of course, carrots. The cake is topped with a delicious cream cheese frosting that makes it a hit wherever I bring it!

For the cake:
2 1/2 cups flour
2 cups sugar
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 1/4 cups vegetable oil
4 eggs
2 tsp vanilla extract
1/4 tsp nutmeg
2 cups grated carrots
1 6-oz package chopped pecans

For the frosting:
1/2 stick butter
1/2 box powdered sugar
4 oz. cream cheese
1/4 tsp salt
1 tsp vanilla extract
Preheat oven to 350°F. Grease and flour a tube pan. Mix first 6 ingredients into bowl. Add cooking oil. Beat 2 minutes at medium speed. Add eggs, vanilla and nutmeg. Beat for 2 minutes. By hand, stir...
