This is a quick, effortless and well-liked side dish which I have learnt from my mother in law. It is very delicious and healthy recipe. Lack of vitamin A can cause poor vision, including night vision, and these can be restored by adding vitamin A (rich in carrots) to the diet. Carrots – 6
Eggs – 3
Onions – 3
Milk – ¼ cup (optional)
Salt – To taste
Red Chilli Powder – 1tsp
Turmeric – pinch

To temper:
Oil - 1 tsp
Mustard Seeds - 1 tsp
Urad Dal - 1/2 tsp
Fenugreek Seeds - 1/4 tsp
Curry leaves - 1 sprig
Green Chillies - 2
1. Heat oil in a cooking vessel. Once hot, add the ingredients listed below temper and saute for 5 to 6 seconds. 2. Add chopped onions and saute till transparent. 3. Add the chopped carrots and mix. 4. Cook with lid on medium flame for 4 to 5 mins, mixing the contents once in a while. Reduce flame, add turmeric and red chilli powder and cook till the carrots are soft. 5. Remove lid and add the beaten egg. Cook with lid for 2-3 mins on medium flame. 6. Remove lid, add salt, milk and mix gently. Cook with lid for 2 to 3 mins. 7. Remove lid and cook for another 2-3 mins. 8. Turn off flame and remove into a serving bowl. Garnish with coriander leaves. Serve warm with rice or rotis.
