Carrot Oatmeal Muffins

Looking for a new AMAZING breakfast muffin? One that freezes well and can be thawed for a quick family breakfast on the way out the door? These carrot oatmeal muffins have quickly become a favorite in our house.

3/4 cup oatmeal (ground down in a food processor if you can)
3/4 cup flour
2 tsp cinnamon
1 tsp Nutmeg
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
3/4 cup sugar (half white half brown)
1/3 cup melted butter
**1/3 cup of sour milk
2 tsp vanilla
1 1/2 cups shredded carrots
1/2 cup raisins (optional I did not add them)
