Cheesy Baked Potato Soup

4 large russet potatoes
2/3 cup butter
2/3 cup all purpose flour
3/4 tsp salt
1/4 tsp peper
6 cups 1% - 2% milk
1 cup Sour cream
1/4 cup thinly sliced green onion
10 bacon strips, cooked & crumbled
1/2 cup shredded cheddar cheese
1/2 cup shredded colby jack cheese
Bake potatoes at 350 degrees for 65 - 75 minutes, or until tender. Cool completely. Peel & cube potatoes. In a large saucepan, melt the butter, stir in the flour, and add salt & pepper. Stir until uniform. Gradually add milk (1 cup at a time) and bring to a boil; cook and stir for 2 minutes, or until thickened. Remove from the heat and whisk in the sour cream. Add potatoes & green onions. Garnish with bacon bits, cheese, and any let over green onion.
