1 T. unsalted butter
1 T. extra virgin olive oil
1 small yellow onion, diced
1/4 c. all purpose flour
2 c. skim milk
1 c. reduced sodium chicken broth (or vegetable broth)
2 t. salt
1 t. pepper
8 oz. reduced fat sharp cheddar cheese
4 c. cooked spaghetti squash - about 2 small spaghetti squash (I made mine in the crockpot)
6 oz. baby spinach
2 T. grated Parmesan cheese
1 T. extra virgin olive oil
