Cheesy-Broccoli Quinoa
Have you tried quinoa? It’s one of the trendiest foods out there & it’s no surprise as to why. It’s filling, it’s deliciously roasty, & it’s packed with good-for-you nutrients. We’ve been trying to eat more quinoa lately in place of rice, pasta or bread, because even though we eat mostly brown rice & whole wheat pasta/bread, quinoa is more nutritious. 1 cup quinoa, well rinsed
1 1/2 cups vegetable broth
2 cups broccoli, chopped
1 cup cheddar, shredded
salt & pepper to taste
