Cheesy Cauliflower

Tender cauliflower is combined with a light cheese sauce. A veggie side dish that is kid approved.

1 head cauliflower chopped
4 cups water or enough to cover cauliflower
2 Tbs butter
2 Tbs flour
1 cup milk
1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/4 tsp nutmeg
2 Tbs parmesan
3/4 cup cheddar cheese, 1/2 cup for sauce then 1/4 cup for topping

1/4 c kosher salt
8 t chili powder
8 t onion powder
8 t garlic powder
