Cheesy Cauliflower in the Microwave

An easy side of a whole head of cauliflower covered in a tangy sauce and cheese.

1 head of cauliflower
1 cup mayonnaise
1 tablespoon dijon mustard
½ teaspoon salt
½ teaspoon pepper
½ teaspoon cayenne
½ teaspoon red pepper flakes
½ teaspoon minced garlic
¼ teaspoon ground coriander
¼ teaspoon paprika
1 cup shredded cheddar cheese
