Cheesy Chicken and Salsa Hash Browns

A simple yet delicious meal with a bit ok kick that will keep you full.

1 package shredded hash browns
2 cups cooked cubed chicken
1 cup black bean and corn salsa
1 can black beans, drained and rinsed well
1/2 cup corn
1/2 cup chopped onion
1/2 cup chopped banana peppers
1 tbsp black pepper
1/2 tbsp salt
1 package shredded Mexican cheese
Sour cream (optional)
Mix together all ingredients in large mixing bowl. Set aside 1/2 cup cheese. Pour mixture into greased baking dish. Bake at 350 for 45 minutes or until hash browns are slightly browned. Sprinkle remaining cheese over top and bake for another 5 minutes. Serve with sour cream (optional.) Enjoy!
