I have tried several fajita recipes looking for the perfect recipe... well, tonight, I saw that I had leftover homemade taco seasoning so I thought I would try my own ideas. I could NOT have been more pleased (neither could my husband). Give this recipe a shot, I would be willing to bet you will be as impressed as I was.

1 lb Chicken Breast, shredded
2 Tbsp Homemade Taco Seasoning (or 1 packet store-bought)
2-1/3 cups Water
1/2 Onion, sliced
1/2 Green Bell Pepper, sliced
1/2 Red Bell Pepper, sliced
1/2 Yellow Bell Pepper, sliced
6 Flour Tortillas
6 Tbsp of Sour Cream
1 cup shredded Cheddar (or Pepper Jack) Cheese
2 Tbsp Homemade Taco Seasoning (or 1 packet store-bought)
2-1/3 cups Water
1/2 Onion, sliced
1/2 Green Bell Pepper, sliced
1/2 Red Bell Pepper, sliced
1/2 Yellow Bell Pepper, sliced
6 Flour Tortillas
6 Tbsp of Sour Cream
1 cup shredded Cheddar (or Pepper Jack) Cheese
1. Boil chicken in 2 cups water for about 10-15 minutes.
2. Take chicken out of water and shred with two forks.
