Chicken Curry Pita Pockets

I was a little skeptical about making these pita pockets with curry in them. I love curry, but wasn't sure this combination was going to work. The curry combined with the sweetness of the grapes were perfect! I was so excited at how these turned out. This is great to prepare ahead of time, and made for such an easy and delicious meal! LOVED THEM! Give it a try! -Robin

3/4 cup mayonaise
1 tsp. Soy Sauce
1 tsp. lemon juice
1/2 tsp. curry powder
1 small onion finely chopped
2 1/2 cups diced chicken (I used a Rotiserrie chicken)
1 1/2 cup green seedless grapes halved
3/4 cup chopped celery
1/2 cup sliced almonds
10 pita pocket halves
10 lettuce leaves
Combine the mayonaise, soy sauce, lemon juice, curry powder and onions. Mix well. Add chicken, celery and grapes. Refrigerate till ready to serve. Add almonds just before serving. Cut your pita pockets in...

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
