Chicken Florentine Pasta

This quick and easy pasta dish is perfect for any weeknight but also nice enough for company. Serve with a green salad and garlic bread and you have a delicious meal!

1 lb. penne pasta
1 1/2 lb. boneless, skinless chicken breasts
Salt and pepper, to taste
2 T. extra virgin olive oil, divided
4 cloves garlic, minced
3/4 c. dry white wine
3/4 c. chicken broth
1 (10 oz.) bag baby spinach
2 c. grape tomatoes, halved
4 oz. grated Parmesan cheese
