Chicken in Tomato-Basil Cream Sauce

Delicious white sauce recipe, even for marinara lovers!

1 pound boneless, skinless chicken breasts (about 1 large breast), cut into 1/2 inch cubes
pepper to taste
1 Tablespoon butter, divided
2 cups fresh tomatoes, seeds removed and diced
1 red onion, diced
1 large garlic clove, minced (or 2 small)
1/2-1 cup chicken broth/stock
1 cup uncooked orzo pasta
1 cup evaporated milk
1/2 cup basil leaves, torn
1/2 teaspoon salt
1/2 teaspoon pepper
mozzarella cheese, for topping
