There use to be a local deli that served the most amazing chicken salad on flaky butter croissants. It was to die for but that little sandwich was so expensive. I was on a mission to make the same sandwich at home for a fraction of the cost. I succeeded.

2 small chicken breast cooked, diced
4 tablespoons cool whip or other whipped topping
3 slices apple peel on
1 stalk celery chopped
3 dried apricots chopped
mayonnaise to taste
6 large croissants baked

I usually grill or bake the chicken the day before and season with seasoning salt.
In a mixing bowl add diced chicken, celery, apple and apricot.
Mix in cool whip till dissolved.
