With the weather quickly turning around to offer milder temperatures, picnics and outdoor gatherings will soon be on everyone’s mind. Then, of course, there’s the deciding what to make or take along to these spring flings. Light … easy … yummy. This chicken salad recipe fits those essentials … and then some! I love my chicken salad with cranberries and apples, so I’ve put this recipe together to reflect that love. I also love pairing it with hearty multi-grain bread, but it is as equally good s

1.5 lb. boneless, skinless chicken breasts, cut into chunks
Chicken bouillon cube
2 tbsp. olive oil
2 tbsp. red wine vinegar
1 tsp. dried garlic
3/4 c. mayonnaise, or to taste
2 Gala apples, diced
2 Granny Smith apples, diced
1/4 c. dried cranberries
2 tbsp. green onion
1/4 tsp. salt, or to taste
1/4 tsp. pepper, or to taste
1/2 tsp. oregano
1/2 tsp. parsley
1/2 tsp. dill weed
Chicken bouillon cube
2 tbsp. olive oil
2 tbsp. red wine vinegar
1 tsp. dried garlic
3/4 c. mayonnaise, or to taste
2 Gala apples, diced
2 Granny Smith apples, diced
1/4 c. dried cranberries
2 tbsp. green onion
1/4 tsp. salt, or to taste
1/4 tsp. pepper, or to taste
1/2 tsp. oregano
1/2 tsp. parsley
1/2 tsp. dill weed
In medium fry pan, combine dry bouillon, olive oil, vinegar, oregano, salt, pepper and chicken and place over low heat .
