Chicken with Mango and Sweet Peas

Mango and peas add color to this simple chicken dish!

1 cup cubed chicken thigh
1/2 teaspoon salt
2 tablespoon olive oil
1 cup sweet peas, thawed
1 cup mango chunks
1 cup chicken broth
Rub the chicken cubes with salt. Heat oil and saute chicken for about 2 minutes. Add mango, sweet peas and broth, cook over medium heat for about 5 minutes or until chicken is done and peas are tender. Note: If you cut mango and chicken into same size as peas, you can achieve a balanced look and taste, but this is not necessary.
