Longtime Shel’s Kitchen followers might remember this recipe for Honey Lime Chicken Tacos, which has been one of the most popular recipes I've posted. I’ve got a tasty variation on these familiar flavors that I think you’ll love just as much. This recipe uses pork for the protein and adds a little heat from chipotle peppers. It is an excellent way to introduce chile peppers into your cooking if you have never tried before.

2 lb. pork loin, trimmed of fat
1 t. salt
1/2 c. freshly squeezed lime juice
2 T. honey
4 garlic cloves, minced
