A decadent and creamy chocolate cheesecake with a Biscoff cookie crust and topped with a rich chocolate ganache.

Crust:
1½ cups Biscoff Cookie Crumbs, about 25 cookies
? cup Unsalted Butter, melted

Filling:
12 oz Semi-sweet Chocolate, roughly chopped (i used bakers chocolate squares

1 cup Sugar
3 Large Eggs
1½ tsp Vanilla Extract
1 cup Light Sour Cream

Ganache:
4 oz Semi-sweet Chocolate, chopped
? cup Heavy Whipping Cream
1 tsp Unsalted Butter, at room temp
