For the Blackberry Cheesecake Mousse
1 1/2 cups blackberries (could substitute any berries you like)
3/4 cup vanilla pudding
1/2 package (4oz) cream cheese (though I'm sure if you wanted to put in the whole package, it would work beautifully. You just might have to increase your sugar)
3 cups cool whip
1/2 cup powdered sugar
2 tsp vanilla
For the Chocolate Pudding
1 cup sugar
1/2 cup cocoa powder
1/4 cup corn starch
pinch of salt
4 cups milk
2 tbsp butter
1 tsp vanilla
For the mousse: Puree blackberries in food processor or blender. Add pudding mix, cream cheese, powdered sugar and vanilla and blend briefly until combined. Fold in cool whip, carefully turning the mixture...
