Chocolate Chip Banana Nut Bread Muffins

Banana bread muffins
1/2c margarine
1/2c brown sugar
1/2c white sugar
2 eggs
1 tsp baking soda
1 1/2c flour
1/2 tsp cinnamon
1/2tsp vanilla
2 overripe bananas, mashed
(Chocolate chips or walnuts optional)
Preheat oven to 350º. Line muffin pan with muffin cups. Cream together margarine, cinnamon and sugars. Add eggs and mix well. Mix in flour and baking soda. Add vanilla and bananas and mix well. (Fold in choc chips/ walnuts). Full baking cups to the top. Bake for 20 min. Makes 12-14 muffins.

15 oz jar Alfredo sauce
8 oz cream cheese
2 t minced garlic
2 T red wine vinegar
1 t grated lemon zest ( plus 1 T lemon juice )
1/4 t ground black pepper
2 c cooked shredded chicken
2 cans quartered artichoke hearts ( 14 ounces each )
2 c fresh baby spinach
1/2 c shredded mozzarella cheese
1/3 c Italian seasoned panko breadcrumbs
1 ounce grated Parmesan cheese
1 T salted butter
