3/4 cup sugar
1 stick of softened butter
1/4 cup applesauce
2 eggs
2 large or 3 small very ripe bananas, smashed
1-1/4 cups all-purpose flour
3/4 cups whole wheat flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3/4 cup shredded coconut
1 cup mini chocolate chips
1 stick of softened butter
1/4 cup applesauce

2 large or 3 small very ripe bananas, smashed
1-1/4 cups all-purpose flour
3/4 cups whole wheat flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3/4 cup shredded coconut
1 cup mini chocolate chips
Preheat the oven to 350-degrees and grease and flour a 9X5 loaf pan.
Add the coconut to a large non-stick skillet and toast over medium high heat, stirring frequently. Remove from heat and set aside.
