Chocolate Chip Coconut Banana Loaf

A moist delicious banana bread with the added sweetness of coconut and mini chocolate chips baked in, all topped with a simple vanilla glaze. This makes wonderful french bread if there is any left over.

2 cups all-purpose unbleached flour
¾ tsp baking soda
½ tsp salt
½ cup mini chocolate chips
2/3 cup sugar
¼ cup (4 TBS) butter, softened
2 large eggs, lightly beaten
1 ½ cup mashed ripe banana (3 - 4 large bananas)
¼ cup plain greek yogurt
3 TBS pineapple juice (or apple juice or milk)
1 tsp. vanilla extract
½ cup coconut + 2 TBS coconut for topping
Glaze: ¾ cup powdered sugar + ½ tsp vanilla + 2 TBSP milk
Preheat oven to 350 degrees Spray 9 x 5 loaf pan with non-stick spray. In large bowl whisk together flour, baking soda, salt and mini chocolate chips, set aside. In medium bowl mix together softened butter, eggs, bananas, yogurt, juice, vanilla and coconut. Stir into large bowl of flour mixture, stir only until just combined. Pour batter into prepared 9 x 5 loaf pan, sprinkle additional 2 TBS coconut over top Bake in oven 1 hour or until toothpick inserted into center comes out clean. Check after 40 minutes, if top of bread is browning too quickly, cover with a piece of foil. Continue to bake until done. When done, remove from oven, let cool for 10 minutes in pan then remove to cooling rack. Cool at least another 15 minutes before slicing.
