Chocolate Chip & Peanut Butter Cookie Sandwiches

Peanut butter filling sandwiched between chocolate chip cookies with an extra special twist! All sandwiches should be made of cookies!

FOR THE COOKIES
3 1/3 cups All-purpose flour
1 ½ tsp. Salt
1 ½ tsp. Baking soda
1 ½ cups Butter; softened at room temperature
2 cups Brown sugar, lightly packed
3 Eggs
2 tsp. Vanilla extract
2 cups Chocolate chips
FOR THE PEANUT BUTTER FILLING
½ cup butter; softened to room temperature (1 stick)
4 oz. Cream cheese, softened to room temperature (1/2 block)
½ cup Creamy peanut butter
2 ½ cups Confectioner’s sugar
TO ASSEMBLE THE COOKIE SANDWICHES.
¾ cup Cocktail peanuts
