These chocolate confetti sandwich cookies are bright and the perfect combination of chocolate and vanilla.

Chocolate Confetti Sandwich Cookies

Yield: 12 sandwich cookies

1 3/4 cups all-purpose
1 teaspoon baking powder
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup unsalted butter (room temperature)
1 1/4 cups granulated sugar divided
2 teaspoons pure vanilla extract
2 eggs (room temperature)
1/2 cup sprinkles
