Chocolate Eclairs

The homemade cream filling makes these eclairs fabulous! You can make them into cream puffs if you prefer.

Pastry:
1 cup water
1/2 cup butter or margarine
1/4 tsp salt
1 cup flour
4 eggs

Vanilla Cream Filling:
1/3 cup sugar
2 Tbsp cornstarch
1/8 tsp salt
2 cups milk
2 egg yolks, beaten
2 Tbsp butter
1 tsp vanilla
1 tsp almond extract

Chocolate Frosting:
1 1/2 Tbsp butter, soft
1 Tbsp cocoa
dash of salt
1 cup powdered sugar
1-2 Tbsp milk
1/2 tsp vanilla
For pastry: Bring water, butter, and salt to a boil. Stir in flour and salt until the mixture forms a ball. Remove from the heat. Using a wooden spoon or mixer, beat in the eggs one at a time, mixing well...
