A super delicious chocolate cake layered with raspberry filling and hot chocolate whipped cream. Frosted in more hot chocolate whipped cream.

Cake
2 cups granulated sugar
1 3/4 cups all purpose flour
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
2 eggs
1 cup milk
1/2 cup canola oil
2 teaspoons vanilla extract
1 cup boiling water

Raspberry Filling
12 ounces frozen raspberries
1/4 cup granulated sugar
1 tablespoon cornstarch
1/4 cup Penzeys Raspberry Enlightenment

Hot Chocolate Whipped Cream
3 cups heavy whipping cream
3 tablespoons water
1 1/2 teaspoons unflavored gelatin
3/4 cup hot chocolate mix
1 1/4 teaspoon vanilla extract
