Chocolate-Raspberry Pancake
Some days ago I bought a raspberry-chocolate mousse. I got hooked! (Haha, no wonder she's raving about it.) And it became the inspiration of making this pancake.

½ cup flour
½ cup instant oatmeal
2 tsp baking powder
¼ tsp salt
3 Tbsp brown sugar
1 egg
½ cup applesauce
½ cup + 2 Tbsp milk
2 Tbsp oil
3-4 Tbsp raspberries, halved
1 Tbsp chocolate chips

In a large bowl, mix the first five ingredients thoroughly. Set aside In another bowl, beat the next four ingredients until well blended. Pour this into the dry ingredients mixture and stir until the big lumps have disappeared.
Heat a pan or griddle. Pour about 1/3 cuplfu of the dough and cook until bubble form on the surface. Flip and wait until the other side is cooked. Remove from pan. Repeat for the rest of the dough.
I really like raspberries with chocolate, especially dark chocolates. Usually I don't mix the dark chocolate chips in the dough. I sandwich about 1-2 tablespoons in between two freshly-cooked pancakes and the chips melt and become the filling. Using semi-sweet chips would also leave a little bit of the chips partly unmelted, but generally people will not notice. However, this doesn't work well with milk chocolate. So if you're using chocolate chips, I'd recommend mixing the chips in the dough instead.
