Chorizo and Sweet Potato Hash

A lighter version of kielbasa and kidney beans, this dinner will leave you satisfied without the weight in your gut.

7.5 oz chorizo, diced
1 medium sweet potato, cubed (approx 3 cups)
1 medium yellow onion, sliced
2 stalks celery, chopped
¼ cup brown sugar
½ tbsp Worcestershire sauce
1 tbsp apple cider vinegar
1 tbsp Dijon mustard
3 cups rice
