Duck Pate:
4 to 5 lb duck
1 lb of ground pork
1/4 cup of brandy
10 to 15 pistachios shelled and peeled
2 large eggs lightly beaten
1 large glove of garlic pureed
1 tsp allspice
2 bay leaves
2 tsp kosher salt
1/2 tsp pepper and thyme
1/4 tsp all spice
Brandy Aspic
Cilantro leaves to simulate holly leaves as garnish
Pink peppercorns or roased red bell peppers to simulate or make little holly berries
