Chunky Guacamole

2 avocados
5 thin scallions, tripped and finely chopped
juice of one lime
3 tbsp of finely chopped cilantro
1 jalapeño, seeded and finely minced
salt and pepper, to taste
Cut avocados in half and remove the stone, scoop the flesh into a bowl and using a fork, mash it to your desired consistency (I like mine chunky) Add remaining ingredients and mix well. Serve with tortilla chips.
