Cinnamon Crumb Surprise

There are few things better in this world than a wonderfully fragrant cinnamon crumb bread stuffed with a surprise layer of cinnamon-infused apples.

1/4 cup brown sugar
1 1/2 tablespoon granulated sugar
3/4 cup pecans
1 teaspoon cinnamon
1/4 cup + 2 tablespoons unsifted cake flour
3 tablespoons unsalted butter, melted

1 heaving cup of sliced apple
2 teaspoons lemon juice
1 egg
2 egg yolks
1/2 cup sour cream
1 teaspoon pure vanilla extract
1 1/2 cup sifted cake flour
3/4 cup granulated sugar
1/4 teaspoon baking powder
3/8 teaspoon baking soda
1/8 + 1/16 teaspoon (scant 1/4 teaspoon) salt
1/2 cup (1 stick) unsalted butter, softened
