Cinnamon Raisin Muffins

Cinnamon is my favorite spice. It's warm, comforting, and feels like a giant bear-hug. For this muffin recipe, I go heavy on the cinnamon because I happen to love it. Feel free to scale it down if you want a more subtle flavor. I have one of these muffins every morning for breakfast, and I never seem to get sick of them.

1 1/2 cups all-purpose flour
1 cup rolled oats
1/2 cup brown sugar
1 tbsp. baking powder
2 tsp. cinnamon
1/4 tsp. salt
1 cup milk
1 egg
1/4 cup vegetable oil
1 tsp. vanilla extract
2/3 cup raisins

Preheat oven to 375. Whisk together flour, oats, brown sugar, baking powder, cinnamon, and salt. In a separate bowl, whisk together milk, egg, oil, and vanilla. Pour over dry ingredients. Mix until just combined. Add raisins, and stir. Spoon into 12 greased, large muffin cups. Bake in center oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
