Cinnamon Rolls with Cream Cheese Icing

For the dough
2 tablespoons fast rise yeast
1/3 cup warm water
1 cup of milk, room temperature
1 cup (2 sticks) butter, cut into small pieces
3 large eggs
1/3 cup sugar
2 teaspoons salt
1 teaspoon vanilla extract
6-7 cups flour, plus more for work surface

For the filling
1/2 cup softened butter (I used spreadable butter from a tub, but you can let a stick of butter sit to room temperature)
1 1/4 cups packed light brown sugar
2 1/2 tablespoons ground cinnamon
2 tablespoons cornstarch

For the icing
2 oz cream cheese, room temperature
1/4 cup butter, room temperature
1 teaspoon vanilla extract
1/2 tablespoon corn syrup
1 1/4 cups confectioner's sugar
