Classic Risotto Milanese

The perfect risotto to pair with any rich food. It is neutral so it goes with everything but still has flavor and that creaminess that makes it taste GREAT!

6 cups homemade turkey stock
1½ tablespoons extra-virgin olive oil
1¼ cups diced onion
1½ cups Arborio rice
? teaspoon kosher salt
¼ teaspoon saffron threads, crushed
½ cup dry white wine
1 tablespoon butter
½ teaspoon freshly ground black pepper
? cup Parmigiano-Reggiano cheese, grated
2 tablespoons parsley, chopped
