Clean Eating Leftover Turkey Bolognese

1 tbsp extra virgin olive oil
1 small onion, diced
3 celery ribs, chopped
2 large carrots, peeled & chopped
2 cloves of garlic, minced
1 cup low sodium chicken broth
1 8 oz can of tomato paste
1 28 oz can of low sodium diced tomatoes
Pinch of thyme
1 bay leaf
1 lb cooked, shredded chicken or turkey
2 tbsp heavy cream
1 lb pasta of choice, cooked
