Clean, Veggie Packed Chicken and Dumplings in the Slow Cooker

This cleaned-up, healthier version of chicken and dumplings is full of nutritious vegetables, lean chicken, and savory herbs.

? cup Cream of Anything Soup Mix (http://www.freshstartnutrition.com/recipecreamsoup/)
2 ½ cups chicken broth
2 large chicken breasts (or 5-7 tenderloins)
2-3 large carrots, chopped
2 stalks celery, chopped
1 small onion, chopped
1 small tube (or ½ a large tube) biscuits*, each biscuit cut into bite-sized pieces
1 cup frozen peas, thawed
2 cups fresh baby spinach, chopped**
Salt and pepper, to taste
