Coca Cola Chicken

This recipe is as "EASY PEASY" as they come! This chicken recipe is a go-to recipe in my house for those busy weeknights when I'm trying to get a good meal on the table fast! The Coke and ketchup together make a "bbq sauce" once it's cooked and our family loves the sauce served over mashed potatoes or rice. The chicken becomes so tender it falls off the bone!

1 cup Coca Cola (regular Coke is best)
2 cups of Ketchup
8 pcs. of chicken (I use bone in chicken, but could probably be done with boneless chicken breast
3 Qt. saucepan
Mix kethcup and Coke together and pour in pot. Rinse chicken pieces and add to the them to the pot (cook uncovered). Spoon sauce over chicken to coat chicken. Turn burner on medium high until it come to a boil, then turn heat down so it's simmering. Let chicken simmer for about 45 minutes and it's ready to serve. ENJOY! **IMPORTANT** Do NOT put lid on pot to cook because of carbonation of Coke. This can also be done in slow cooker. I cook it uncovered on high for about 3 1/2 hours.
