1¼ cup flour
¾ cup sugar
1 tsp baking powder
¾ tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
2 eggs
½ cup oil
½ cup sour cream
1 tsp vanilla
1 cup sweetened coconut flakes
1¼ cup peeled ( shredded carrots about 3 carrots )
Orange Cream Cheese Frosting:
4 oz cream cheese ( room temperature )
2 Tbsp butter ( room temperature )
1 tsp orange zest ( plus extra for garnish )
2 Tbsp fresh orange juice
2½ cups powdered sugar
