I especially enjoy the added coconut flakes to the breading of this recipe. It takes the already tastiness of chicken nuggets & kicks them up a notch or two. John prefers to drizzle chicken nuggets in spicy brown mustard, but I like the added sweetness of local honey. To Ruby, it doesn’t matter how they were served- she was happy to eat them (plain) by the handful.

1 chicken breast per serving
1/2 cup whole wheat flour
1 whisked egg
1 cup bread crumbs
1 cup crispix
3/4 cup (unsweetened) coconut
salt & pepper
