Coconut Chocolate Almond Cookies (Almond Joy)

1 1/4 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. butter (softened)
1/2 c. (packed) brown sugar
1/2 c. white sugar
1 egg
1/2 tsp. vanilla extract
1 1/3 c. flaked coconut
1/2 c. crushed almonds
1/2 c. chocolate chips
Preheat oven to 350 degrees. In a large bowl, combine flour, baking soda, and salt; set aside. In another large bowl cream together the butter, sugar, and brown sugar. Beat in eggs and vanilla until light and fluffy. Gradually blend in flour mixture. Then add coconut, almonds and chocolate chips until evenly blended throughout. Drop dough by teaspoons onto baking sheet (lined with wax paper works best). Cookies should be 2 - inches apart. Bake for 8 - 10 minutes or until lightly toasted.
