Coconut Curry Butternut Squash Soup with a Coconut-Yogurt Spiderweb

This spooky soup is rich, warm and velvety smooth. The flavors of the butternut squash, curry and coconut go so perfectly together, it’ll be hard to believe that it’s super-healthy, low in calories and 21 Day Fix approved!

1 tsp coconut oil
1 medium onion, chopped
1 cup carrots, chopped
3 cups low-sodium chicken broth
4 cups butternut squash, peeled and cubed (about 1 medium)
2/3 cup canned coconut milk
3/4 tsp mild curry powder
Spiderweb Topping (you may need slightly more or less depending on the size of the bowls you\'re using):
1 cup plain Greek yogurt, 1% or fat free
2 1/2 Tbs canned coconut milk
1 medium onion, chopped
1 cup carrots, chopped

4 cups butternut squash, peeled and cubed (about 1 medium)
2/3 cup canned coconut milk
3/4 tsp mild curry powder
Spiderweb Topping (you may need slightly more or less depending on the size of the bowls you\'re using):
1 cup plain Greek yogurt, 1% or fat free
2 1/2 Tbs canned coconut milk
Heat a medium-large pot to medium heat. Add coconut oil, onions and carrots. Saute until vegetables have softened.
