This cupcake recipe is one of the lightest cupcake recipes you'll find. With the Swiss Buttercream they are absolutely divine.

1 box Angel food cake
1/2 c. shredded coconut, toasted

Swiss Buttercream Frosting

1 c. egg whites
1 1/2 c. granulated sugar
2 c. (4 sticks) butter, at room temp cut into chunks
1 tsp. vanilla
1 tbsp. freshly squeezed lime juice

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
