2 cups flour
1/2 cup sugar
2 tsp baking powder
1 tsp salt
1/2 cup oil
2 eggs
2 cups milk
1 tsp vanilla
sliced strawberries
whipped coconut-lime topping
toasted coconut
For the Whipped Coconut-Lime topping:
1-2 cups heavy whipping cream
4 oz cream cheese
1/2 cup powdered sugar
1/2 tsp vanilla
1/4 tsp coconut extract
1 tsp fresh lime juice
1/2 cup sugar
2 tsp baking powder
1 tsp salt
1/2 cup oil
2 eggs
2 cups milk
1 tsp vanilla
sliced strawberries
whipped coconut-lime topping
toasted coconut
For the Whipped Coconut-Lime topping:
1-2 cups heavy whipping cream
4 oz cream cheese
1/2 cup powdered sugar
1/2 tsp vanilla
1/4 tsp coconut extract
1 tsp fresh lime juice
1. Stir all the dry ingredients for the waffles together in a big bowl. In a separate bowl combine wet ingredients and whisk well. Combine wet and dry ingredients. Stir until just mixed. Don't overmix....
