Coconut Oil Cookie Bars with Dark Chocolate Chips & Peanut Butter M&Ms
A quick cookie bar recipe made with a coconut oil/butter combo. Add whichever mix-ins are your favorite - I picked peanut butter M&Ms and dark chocolate chips.

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 stick butter, softened (I like to use salted)
1 cup coconut oil
3/4 cup sugar
3/4 cup packed brown sugar (I used dark brown)
1 teaspoon vanilla extract
2 eggs
1/2 cup dark chocolate chips
1/2 cup peanut butter M&Ms (1/4 cup to mix in the batter, 1/4 cup to press into the top)
1 teaspoon baking soda
