Coconut Oil Strawberry White Chocolate Oatmeal Cookies

One bowl cookie recipe starring strawberries and white chocolate! Made with oats, whole wheat, applesauce, and coconut oil. One of my family's favorite cookies ever!

1/4 cup coconut oil
1/4 cup unsweetened applesauce
1 egg
1/2 teaspoon vanilla
1/4 teaspoon salt
1/2 cup whole wheat flour
1/2 cup all purpose flour
2/3 cup packed brown sugar
1 teaspoon baking soda
1 cup oats
1/2 cup white chocolate chips
1/2 cup diced strawberries (frozen is best)

1 lb. dried navy or Great Northern beans
1/2 lb. bacon
1 medium onion
