Coconut White Chocolate & Almond Cookies

These simple and delicious cookies mix up in just one bowl for easy clean-up. Soft and chewy with a moist crumb, these are sure to please!

1 cup light brown sugar, packed
1/2 cup butter, softened
1 egg
1 teaspoon vanilla extract
1 Tablespoon milk
1-1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/3 cup sliced almonds
1/2 cup white chocolate chips
1-1/2 cups flaked coconut
1/2 cup butter, softened
1 egg
1 teaspoon vanilla extract
1 Tablespoon milk
1-1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/3 cup sliced almonds
1/2 cup white chocolate chips
1-1/2 cups flaked coconut
Preheat oven to 350 degrees F.
In a large bowl, cream butter and sugar until light and fluffy. Add the egg, vanilla, and milk and mix well. By hand, stir in the flour, salt, baking powder, and baking soda just until mixed. Add the almonds, coconut, and white chocolate chips and stir until incorporated.
Using a 1/4 cup measuring cup, scoop dough and shape into balls. Place on cookie sheets lined with silicone baking mats or parchment paper about 2 inches apart. Press down with the palm of your hand to slightly flatten the balls of dough.
Bake for about 12 minutes until edges are golden and centers are set. Allow cookies to cool on the sheets for about 5 minutes before removing to wire racks to cool completely.
Yields about one dozen cookies.
